I've purchased a Kenwood KDC-MPV622 CD/MP3 receiver, I wanted to do the installation myself because I don't want to pay ridiculous installation fees. Right now, I don't plan on upgrading my speakers, maybe in the future. My question is, if I install this headunit and retain the current factory stereo setup, what difficulties would I run into during the installation? (I have a 03 GT-S with the stock JBL premium stereo)
I know that I would need to purchase a custom dash kit. But do I have to get the Scosche TA-03 kit also? I heard it gives out lots of unneccesary buzzing noise. Once again I am not an expert at this, I want to get the job done as simple as possible.
Thanx. Any help would be appreciated!

I think you are making it more difficult than it actually is going to be. Since you are not going to install an aftermarket amp it should be a breeze. Just go to any car audio store and get your brackets and wire harness. Take the wire harness and match up the wires. Take out your stock stereo and install your new stereo. That should be it.

I didn't think that they made a wiring harness for the 7th Gen Celica...? At least, that's what I remember reading. In either case though, headunit install, even if using an amp, should NOT be difficult. Matching up wires and soldering/taping them will be your biggest time consumer.
However, I think you will end up regretting the Kenwood. Me, my brother, and my best friend all bought different Kenwood head units around the same time last year. I don't remember the model numbers, but I know that I had the KDC-x859. Within 2 months of buying them, all three of us starting having problems with the ejection mechanism. The CDs refused to come out at all, so I ended up using a small pair of pliers to eventually remove the CD...

you will need to either bypass the factory amp or run the TA-03, possibly with the noise mod.

Buy the TA-03, it's really easy to install, and if needed, do the noise mod. It can take a little while to do but most of the work is already been done here. See the "Stickyed" Thread on it.
There is a few of us who just finishing it up.
