got some stuff to clean the engine bay area... but just want to be sure, which part(s) of the engine bay can I put water on and which part(s) I can't?

Cover anything electrical, which is pretty much everything. There are so many electrical components hiding here and there I would never hose the engine bay. I use some old rags to hit the trouble spots. A lot of people don't have problems covering it, hosing it and then letting it air dry over night. Best of luck.

I dont cover anything up. I just hose it all. Its not going to hurt it. When it rains there is a possiblity it will get wet anyway. If it would hurt it, Toyota would have made a cover for it from the factory.

I've used Simple Green with cold water from a low pressure hose on all my cars for years with no problems. Just be sure to only clean a cold engine, not a hot one. Dry it all off with an old chamois as best as possible afterwards and finish up with some vinyl dressing (don't get in on the belts) and you'll keep it just like new for a long time.
