how do you guys think I will fair with 17x8's with 225/40's, 35mm offset, and the 1.6/1.8 F/R drop?

You should be fine. I have 17 x 8 with a 1.5" drop f/r and no rubbing.

I'd say you will with a 35mm offset. Get a 40mm offset and you should be fine.

Thats what I was afraid of. He thinks I will rub during jard cprnering on the outside fender

I'd say that the rubbing would be on the outside. The stock offset is 39mm, you add another 4mm plus 3/4" of wheel and I'd say you'd get rubbing. SCC is running a 32mm offset on 7" wide wheels with no problem, but I'd worry about 8" wheels.
