I know our wheel offsets are 39mm.. but will 35 or 45mm fit?

Yes, in general, those will fit, they'll just shift the centerline of the wheel.

What you have to watch out for is big change in offset coupled with big increase in width...you can get yourself in danger of rubbing on the inside or outside (esp if you've lowered your car).
