While I was tightening the throttle cable, i accidently tapped the metal pipes that the coolant runs through right above the throttle body of an 01 GT. Where two pipes join and welded, it spurted out some coolant. It doesn't appear to be leaking but to be sure if it was, I took it for a drive to get the car warmed putting pressure in the coolant system.

It's not leaking after a drive, but did I do some damage that might cause problems in the future?

no, you didn't do anything, theres air inside your system. it'll take a while to get it flushed out, it will do it naturally. just make sure you keep filling it up, half way from topping it off and the full line.

i did the same thing, but when i installed the CAI. a whole bunch came out. and i thought there was a leak, but there wasn't. now it's back to normal. keep coolant and water inside your car and check it b4 and after you get into you car.
