You should be able to just disconnect the male/female plugs when you pull out the radio

the first thing you should do is disconnect the battery so you prevent the chance of an electrical short accidentally. then when you take the dash pieces off from around the radio. there will be 4 screws/bolts holding the install kit in ( depending on what type of kit you have ) remove the bolts and take the whole assembly out. on the back of the radio pull out the rca cables and leave them go. then follow the power plug from the back of the radio to where they plugged it in to your factory harness. unplug it there so the radio keeps its power plug and is re usable. as far as the amp uninstall you are probably better off just leaving the wires in the car unless they are some real good quality stuff. unscrew the terminals on the amp and remove the power, ground and remote wires as well as the speaker wires and rca cables.
good luck

if you are that worried talk to a audio shop that hooked it up and ask if they could have a guy come out and take it out

pull the climate control knob out..all of them..even the outside/inside air slider..it will pull out..look at the cold/hot and the air direct position on the climate control...u'll see 2 screws..one on each side..take those out..remove the shifting booth..look under the climate control..on each side..there is 1 screw..take that out..now u'll be able to pull from the bottom of the console up and out..take 2 10mm socket and wrench..remove the 4 gold screws holding the radio bracket in place..pull the radio straight out..unplug the harness or cut..watever u want to do..
there..radio is out..simple..u can just unhook the ipod and pull it out of the glove compartment..easy..
