I was thinking of getting a set of wheels, would like to know if they fit even when lowered by 2''

-225/35/18 will be pretty much the same circumference as the stock wheel/tire set, so speedo won't be off.
-215/40/18 will be a bit slower, like about 2 mph.
-225/40/18 will be about 3 mph slower.
Personally, I wouldn't go with a 215. Wider tires = bigger contact patch to ground.
And keep in mind that not all tires are created equal. Some 35 series tires look like they have no sidewall at all. Protect those rims and roll with a 225/40.

my car is dropped about 2.5 and i have 18x8 inch rims with 225/40/18 and they rub a little when i turn the wheel all the way to the left and the right

I haven't done the math in a long time but if I remember correctly:
The reality is that tires are not made mathematically perfect and vary by model. My preference is to select the tire model, then check with the manufacturer's specifications page to see how many turns per mile (revs per mile) would give you the correct tire.
Let say that the original tire on my GT had a factory rated turns per mile of 857, I would then
215 35 18 0.8% slow (65 MPH will read as 64.5 MPH)
225 35 18 1.9% slow (65 MPH will read as 63.8 MPH)
215 40 18 4.3% slow
225 40 18 5.7% slow
I then go to a dealer that allows tires to be returned and check them for fitment (rubbing) and then compare the speedometer to my GPS to ensure that I an within an acceptable difference.
Keep in mind that speedometers do not read accurately because of the European law that went in effect a few years ago that stated that speedometers may never indicate a speed slower than actual. Toyota reads out 4% faster than actual while all other manufacturers that I know of read out 7% faster than actual.
When you combine the rotations per mile, the built in speedometer error and avoiding too small a sidewall, I would select the 225/35-18. (Keep in mind that the taller the tire the slower the acceleration, the better the top speed and the better fuel economy will be, albeit in small amounts so I don't want to go too far out of range).
