I don't really understand this.. I know that the Celica uses 5 bolt rims but what is this offset and everything and what does the Celica need?
18x7.5 5 x 100 45mm offset
So what does the 5 x 100 represent and then the 45mm?
Also is all of this information the same for GT and GT-S models?

5x100 is the bolt pattern. 5 lugs wit a 100mm spacing.
Offset is wher the center line of the wheel is in relation to where the machined inside face of the wheel meets up with the hub.
The Celica is 39mm from the factory, and 35-40mm is where I would try to keep the offset (the 45 might work, too). With that 18x7.5 wheel, it is 1 inch wider than stock.
If you had a 39mm offset, then you would be adding 0.5 inches of width to either side of the wheel.
With the 45mm offset you are adding 0.5+0.23=0.73 inches of width to the INSIDE, and only 0.27" to the outside. The wheel.
