I've been looking for a replacement owner's (not repair) manual for a while now.

Where's a good place to get one besides a Toyota dealership?

I have a 2k GT-S 6-spd.

You can always search ebay, or maybe go to the Want To Buy forum and see if anyone has a spare one around.
