Is there any possiblity that my pistons could be damaged from hitting the valves. I really can't afford a whole new short block but I know I am going to have to get a new pressure plate, oil pump and head w/ internals. What do ya'll think b/c I'm really screwed if the pistons are damaged.

Yes, they could be screwed.
Take a hunk of aluminum (piston) and a chunk of steel (valve), whack them together, see who wins.
Typicalloy they will be OK, unless a valve breaks off and gets beaten wround in the engine, then you ruin the piston and the head.
It will be obviouls if the pistons are bad.
Theoretically you could also bend the rods if you hit the valves. I would at least have the rod and main bearings replaced.
