After looking really hard I actually did find a working wiring harness for a 00 GT-S so I didnt have to deal with cutting the factory harness.

Anyways what u should be lookin for is a "Lexus Amp Integration" wiring harness. It'll plug rite into the GT-S harness (I have the 6 speaker as well if you dont it might not work) it has RCA cables so u have to have a head unit that can support. And it doesnt have a pin for the dimmer so you have to clip that from the factory harness and connect that to ur new head unit urself unless u dont mind being blinded at night by ur head unit

I'll see if i can get some pics later

03 GTS Wiring codes

I have the wiring diagram for an 03 GTS w/JBL 6 speakers stereo, this is the only one I found that matched the wiring in my 03 GTS. this shows the ACC wire from the head unit as a Gray Wire, the Constant HOT wire as Blue w Yellow stripe, Hope this helps.
The pic is to large to upload, and if I shrink it you can read it so, all I can do is tell you.

Thanks to this info I was able to get sub installed with a stock stereo. Dam sounds nice now. The speakers weren't quite getting the real low parts in my music. 300W sub and amp, not even turned up 1/4 of the way on the amp, sounds way better (thanks to celica being a hatchback) than when it was stuck in the trunk with my old car.
