First off just get out there and practice....

I do the first, let it out slowly. This way it won't jerk after you have it in gear. Everyone drives differently but just drive how you feel comforable.

Practice, practice practice.
Drive stick long enough and you will find out what works best for you and your car.

Definitely the first one. Learn to know where your clutch's engage point is at. When you let go of the clutch the first time that is where you stop. Gas it and let go of the clutch smoothly and completely.

If you don't believe me try doing the second one in first gear. You're just going to stall.
